Super Bowl Recipes

Today’s post is about Super Bowl Sunday! We had friends over to the house and had a lot of great food on Sunday. Although the game was a little boring, the team I was rooting for won, so it was a good day!

Among the dishes I made, here are some pictures and the recipes. I will need to abbreviate the chili recipe from Gwyneth Paltrow’s cookbook because it is too long to type in detail, and I made some alterations to it anyway. The chili will feed a lot of people — I made an extra batch the day before the Super Bowl to take to church for the annual chili cook-off!

This chili is vegan and vegetarian. Prep time: 30 min. Cook time: 3-6 hours, depending on the heat of crockpot.

Heat in skillet on stove:
2 T extra virgin olive oil
1/2 yellow onion, diced
1 large carrot, diced
1/2 large red bell pepper, diced
2 cloves garlic (I just used the dried kind in the pantry)
3/4 tsp. chili powder
1/2 tsp. ground cumin
1/4 tsp. black pepper
1 tsp. chipotle in adobo (you can find this in the international aisle at grocery stores, it is in a small can and the peppers are kind of dark red/brown. I usually put in 3 peppers because I’m not sure how you would only measure 1 tsp. as Gwyneth instructs…)

After you heat this on the stove for about 10-15 minutes, transfer it to the crock pot. Add to crock pot:
14 oz. black beans, drained/rinsed
14 oz. red beans, drained/rinsed
14 oz. white beans, drained/rinsed
28 oz. diced tomatoes in their juice
Pinch of coarse salt
3 T tomato paste
14 oz. water (just fill one of the empty cans to measure it)

Put your crockpot on low for 6 hours or on high for 3 hours and enjoy! Such an easy and delicious recipe.
